Eggs Great Frugal Food!

Money Saving Egg Recipes!

This post was inspired by Sue Mah, a registered dietician. Do you know how amazing eggs are? This post has a few frugal egg recipes that can help boost your budget, as well as some interesting dietary information from an interview conducted with Sue Mah -Registered Dietician.

Registered Dietician Sue Mah Shares Important Egg Information

"Eggs contain fourteen essential vitamins and nutrients. It’s a rich mix that includes choline, “which is so important for brain health: eggs are one of the few foods that contain choline,” says Sue Mah. They’re also one of the few foods that contain vitamin D, not to mention vitamin A, E, and B12, alongside iron, folate, and much more. Even better, says Mah, they’re a great food at any age: “baby’s first food at 6 months could be a whole egg; the first meal a teen learns to cook for themselves could be an egg recipe; and when I visit my grandma, I love to make her scrambled eggs!”

What is Choline? 

According to an article on BMJ Nutrition, Prevention and Health by Dr. Emma Derbyshire:
Choline is essential for humans; because the amount produced in our liver is not sufficient to meet human requirements. Therefore, we need to get it from dietary and supplementary sources.
Choline, Dr. Derbyshire notes, is critical for a number of functions across the life cycle.Low levels of  choline are linked to liver disease, offspring cognitive function and potential neurological disorders.Choline is especially important for pregnant mothers as it helps develop the brain function of her unborn child.
The following Table, from her article, shows that beef is the only food higher in choline than eggs.

Here are a few great egg recipes you might try with your family.

Scrambled Eggs

 Scotch Eggs 

Jenn, a blogger in upper New York State, created this twist on traditional Scotch Eggs. In her recipe she uses  pre-made crescent rolls instead of coating them in bread crumbs. She gives an excellent step-by step guide to making her recipe for Scotch Eggs on her blog - Frugal Upstate.

Fluffy Egg Omelette 

My father always liked my omelettes. Omelettes are great for any meal. One of my favourite ways to fill an omelette is with cheese. If you really enjoy DIY, you might try your hand at making your own cheese at home with one of these Make Your Own Cheese Recipes  that I shared here on an earlier post.
Here is how I make my cheese omelettes.
Ingredients:
2 Large Eggs - Room temperature
1/4 t. Nutmeg
1/4 C Milk
1/4C Shredded Cheeese
2T. Canola Oil

Method
  1. Separate the egg yolks from the egg whites and put them in separate bowls.
  2. Mix the milk and nutmeg into the egg yolks.
  3. Beat the egg whites until soft peaks form.
  4. Gently fold the egg yolk mixture into the egg whites.
  5. Heat a cast iron skillet and add the 2 T of Canola Oil.
  6. Pour the egg mixture into the pan and turn it off.
  7. Cover the pan and let sit. the egg mixture should steam and rise.
  8. After 5 minutes gently sprinkle the shredded cheese on top and cover to melt the cheese.
  9. Remove the omelette from the pan and fold in half and serve.
Note: The cast iron frying pan is supposed to add iron to your diet and Canola oil reduces bad cholesterol in your diet and increases your good cholesterol .
